¼ tspSesame & Gochugaru Tuna Rub
white sesame seeds
1 tbspblack sesame seeds
1 tbspKorean chili flakes (gochugaru)
1 tspflaked sea salt
½ tspMethod: Pat the fish dry. Mix and press firmly onto both sides of ahi tuna. Sear in a very hot pan with a little oil — 60-90 seconds per side. Slice thin against the grain.
